You can think of it as searing in the flavor. The turkey is enveloped by oil and it sears in all of the natural turkey flavor keeping the turkey from drying out as is the case with some roasting or smoking techniques. I’m sure the oil seeps into the turkey a little bit but that’s also where you can use a more healthy oil as well.
